This unique and tasty coconut sauce was made from a recipe in the “Malibu Farm Cookbook” pg. 190. The fragrant fresh ginger, turmeric, and lemongrass are all raw and barely cooked to warm in the coconut milk so I imagine all of their lovely health properties are not lost in this dish. This is a great quick dish to whip up any night of the week. I followed the recipe as directed and added proteins such as tofu, chicken and shrimp and lots of veggies including carrots, onions, peas, snap peas and red bell pepper. My family loved the curry and I will be making it again…and again.
