Cobb Salad is one of my favorite salads. The crunchy bacon, chopped avocado, chopped tomatoes, hard boiled egg, poached chicken breast, and last but not least the cave aged blue cheese, just make this salad the perfect lunch or dinner. I make a classic home made Caesar salad dressing to dress the greens with.
Cooked crumbled bacon, use a good quality, preservative free, apple wood smoked bacon or similar product. Nueske’s bacon http://www.nueskes.com/shop-by-department/smoked-bacon.aspx#.Ukuni-bn-P8 is my favorite but it is very pricey. Many natural foods grocery stores have a preservative free, apple wood smoked version which is perfectly suitable. Use regular smoked bacon if you can’t find the apple wood smoked type.
Chopped Hardboiled Egg (Place uncooked shell on eggs in cold water, bring to boil, turn off heat and cover with lid for 13 minutes. ) Cool, Peel, Eat.
